My kids are healthy eaters for the most part, but the challenge is to make interesting, healthy lunches for school (neither of them like the school hot lunch & who can blame them..yechy). My son loves mini-corn dogs, hot pockets, pizza rolls, pizza, burritos, burgers (whitecastle frozen burgers) which we can quickly microwave and put in his lunch. However, these are not the healthiest options. Has anyone had any luck making homemade, healthier alternatives to the above mentioned convenience foods? After 5 years of making school lunches, I'm out of ideas! Eating Well needs a whole edition dedicated to this very subject!

nkmom...I am where you are. I got tired of the same stuff (that's why I clicked on the link...lol!) My kids just started summer break so I am starting a list of ideas for next school year. They like bringing lunches over buying them from school.
My kids stopped liking sandwiches, so I do what I call "pizza" lunch or "enchilada" lunch. The first consists of breadsticks (soft or crispy), grated nozzarella cheese, and a small container of organic pizza sauce for dipping. This was my "lunchables" alternative when they were begging for those nasty concoctions. The enchilada lunch inlcudes a whole wheat tortilla, grated mexican cheese and Trader Joe's enchilada sauce for dipping. My sons have loved these lunches for several years running.
