Cloves are used for a lot of baked items--in particular Christmas cookies, spice cookies and spice cakes. Cloves also add flavor to fruit pies--peach, for example. I like cloves paired with cinnamon, so if you have some recipes calling for cinnamon, you might add some cloves as well. Cloves have a stronger flavor than cinnamon, though, so don't add too much until you get a sense of how it works as a flavoring. If you make pickled spiced peaches or pickled cantalope, you can use the cloves there too. Generally though, for something like a pickled or preserved fruit, you should use whole cloves because the powdered version discolors the final product.
I like to buy cloves in bulk so I can buy a small portion and don't have to worry about keeping them too long.
