I try to go on a backpacking trip each year. My favorite meal is perfect for the first night out. I get a rice-&-bean mix and prepare it with a small can of enchilada sauce as part of the cooking liquid. I bring tortillas, Cheddar and some fresh veggies.

Since I travel in a RV, we find outselves eating out doors much of the year. That also gives us a chance to sit out with our puppy. We've found that with a little bit of recipe wiggling, you can make nearly anything an ourdoor meal. Our travel grill is setup to be able to work with pots and pans as well as grilling. We've been known to grill just about anything that we can (recently grilled the chicken for the Thai-Chicken pizza), and enjoyed it outside with a glass of wine.
