Breakfast is the most important meal of the day. We're all rushed during the week getting ready for work, getting the kids out the door... But we should still take a few minutes to eat something.

What are your favorite quick and easy breakfasts?

My new favorite is what I like to call a Mexi-Melt--I toast a whole-wheat English muffin then spread it with refried beans, top with some salsa and a sprinkle of cheese then nuke it to heat it all up. I found that putting the salsa between the cheese and beans helps to keep the cheese from melting to quickly before the beans heat up!

On the weekend, I take things a bit slower. Though I am partial to the Wheat Berry Porridge from the latest issue of the magazine. I make a big batch and reheat it through the week. I once omitted the raisins and stirred in a chopped perfectly ripe Bosc pear and it was even better! I also make frittatas with lots of veggies or oat pancakes with blueberries...

During the week I generally have a bowl of oatmeal or other hot cereal with chia seeds, hemp nuts or flax seeds. I add hemp milk and a fruit to it. It's quick and quiet.

On the weekend I generally make a protein shake for breakfast with hemp milk, rice protein powder or nut butter, flax seeds and fruit. I can wake up later and the noisy blender won't disturb my sleeping beau.

My healthy version of the Egg McMuffin...

Toast one whole grain English muffin. Meanwhile, in small bowl, beat one large egg, add precooked real bacon bits, chopped ham or Canadian bacon, bell peppers, baby spinach or onion. Pour into a custard cup or ramekin. Microwave on HIGH for 45 seconds to 1 minute or until egg is cooked through. Place on toasted English muffin with a slice of reduced fat cheddar cheese (my favorite is Cabot's 50% Light).

I LOVE to make a dish I learned on Martha Stewarts old show. "Warm Salad with Egg and Pancetta" by Cesare Casella from Beppe restaurant in NYC. It's so EASY yet gourmet!

You can look the real recipe up on Martha's site, but here's my version for 2:

Cook some pancetta cut into strips in a bit of olive oil with some italian seasoning spice.

add 3 whisked eggs.

Place eggs and pancetta over greens and drizzle with "pontormo dressing" which when I make for 2 = 2 tsp red wine vinegar, 2 tsp balsamic vinegar, 2 tsp red wine, dash ground pepper, 1 Tbsp olive oil.

It rocks having salad for breakfast!

RazzerI usually have oatmeal and raisins for Breakfast during the week, and then something alittle different on the weekends. With this cold NE weather, Oatmeal is a real warmer-upper-Nance Smiler

Just for a little variety, what do other cultures eat for breakfast that is lower in carbs and eggs? Any ideas would be helpful for my picky eaters. Thanks!

I love to make a quick breakfast burrito.
I saute' chopped onion with a little bit of pakaged bacon bits. I then add 1-2 whisked eggs and scramble it all together. Fold into a tortilla and top with shredded cheese and salsa.
It's quicker than it seems, and yummy!

Hello,

My family enjoys learning about other ethnicities and a favorite way is through food. By any chance would anyone have information about what other cultures eat for breakfast and some recipes? For example, some Swedish hostels/hotels present a breakfast board with reindeer meats, breads, cereals, cheeses, juices, etc. Thanks.

I know I'm a little late on answering this question, but I'm going through all the topics and answering when I can. I LOVE breakfast, I make a soy cappuccino, WW toast with almond butter and sliced bananas topped with cinnamon..mmm, can't wait till morning!
