Hi, I am looking for a recipe that appeared in the March/April 1992 issue of Eating Well. It was for jerk chicken skewers. I have made that recipe many times since but the last few years have been from memory and I'm not sure if I have all the ingredients stored in my brain.
I have all the other recipes from that particular article but in a cross country move I lost the favorite.

2 Tbsp chopped onion 4 tsp chopped fresh thyme or 2 tsp dried 4 tsp sugar 2 tsp freshly ground black pepper 2 tsp salt ½ tsp ground nutmeg ½ tsp ground allspice ½ lb. boneless, skinless chicken breasts, trimmed of fat and cut into 1” cubes 1 Tbsp vegetable oil 1 6oz. jar whole sweet pimientos, drained and cut into 1” squares Fresh cilantro leaves for garnish
In a food processor or blender, combine onions, thyme, sugar, pepper, salt, nutmeg and allspice and blend to form a paste. Transfer to a shallow nonaluminum dish. Place chicken in the marinade and turn to coat. Cover and marinate in the refrigerator for 1 hour, or for up to 8 hours, turning periodically. In a large nonstick skillet, heat oil over medium-high heat. Add the chicken and sauté for 4 to 6 minutes, or until the outside is browned and the inside is no longer pink. Thread a piece of chicken on to each of 18 small wooden skewers, followed by a pimiento squareand a cilantro leaf. Add a second piece of chicken to each skewer, then a second square of pimiento and a cilantro leaf. Serves 6 (3 skewers each) 113 calories per serving. 14g protein, 4g fat, 5g carbohydrate, 743mg sodium, 36mg cholesterol
