I also use Jarlsberg Lite slices, Cabot's 75% reduced fat cheddar and Frigo's reduced fat mozzarella sticks( sliced for pizza topping).Oh, also reduced fat feta ( several brands).

I like Cabot's 50% light cheddar, and Athenos reduced-fat feta. Also, Sargento's makes a good light shredded mozzarella (for pizza) and a light Mexican blend (for burritos).

Unfortunately I tasted Cabots "prime" cheddar (in black wax) at a party at Christmas and had to be dragged away from the table. And now the poor lowfat cheeses don't taste quite as good now. Yes, I can still remember that wonderful taste!

I usually do the Cabot 50% light, too. I tried to do the 75% light, but couldn't handle the taste. Too much like plastic.

Cabot's 50% is my favorite, which is saying a lot because I think most fat free or reduced fat cheese tastes like rubber. This is the only reduced fat cheese my family and I will eat.
