Some low fat cheeses that I absolutely love are Jarlsberg Light Swiss, Cabot's and Kraft's light cheddar and Trader Joe's Low Fat Smoked Gouda.
I also enjoy light ricotta cheese, if you can find it. Most brands make full-fat and part-skim. The light has 3 grams fat/1/4 c. but to me still tastes rich and creamy. It also melts well. I'm pretty sure that Polly-O and Sorrento both have light ricotta.
It's wonderful mixed with cinnamon and a sweetener of choice on a piece of whole wheat raisin bread and put under the toaster oven or stuffed in a warm sweet potato.
