What are your favorite oils to cook with and what do you do with them?

I usually have walnut and hazelnut oil in my fridge. I like to put them in salad dressings mostly, but I do often make a pizza where I brush the crust with walnut oil, then top with sliced pears and crumbled blue cheese. YUM. It's a great party appetizer too.

I also have sesame, canola and extra-virgin olive oil. I like having garlic oil around as well--it's great for toasting breadcrumbs in for topping pasta, fish, etc or brushing veggies with before grilling.
