I was at my local Kroger the other day and couldn't resist buying a couple of the flat iron steaks they had on special. The flavor and tenderness reminds me of a flank steak, but the cut is long and narrow. The size is just right for my husband and I to share. I have heard a lot about these steaks lately, several of the chef's on FoodNetwork tout their goodness (Rachel Ray, Giada De Laurentiis).
I guess what I am looking for is more nutritional info on the flat iron steak, especially the fat content. It's a rather new cut, so it's hard to find anything but recipes on it. Anyone know of a place I can check this out?
