A friend of mine just forwarded me an article about eggs and cholesterol, stating that the type of cholesterol in eggs is not necesesarily increase the risk of heart disease. I am of the school of thought of "everything in moderation" no matter the latest findings, but anyone else have any other thoughts on the topic? Thanks for passing on that article. I think it adds to the research that has been indicating that eggs are perfectly OK to eat - in moderation. Blood cholesterol levels are influenced more by saturated fat in the diet than by dietary cholesterol, and this article supports the evidence that eggs do not raise cholesterol levels, despite their high cholesterol content.

I've gotten into these egg creations things which are not just egg whites but have omega 3 added. They're lower in cholesterol of course, and were a little weird at first as I've hadn't used something like em before, but can be cooked like normal eggs.
