I have just sent an e-mail to Eating Well Magazine asking that they take on the huge task of compiling healthy and delicious game recipes. Elk, Venison, Buffalo, Antelope, Duck, Goose Pheasant, Quail, Etc are drastically overlooked as a healthy source of eating. For those that do not hunt themselves, there are plenty of domestically raised game species available in the US for this to become a real and healthy alternative for many people. It may also be something new to try for many more people! I have been cooking and eating game of different sorts for years and would like to hear from other cooks with the same interest.
Good day! Id say MOOSE or partridge would be good to try on here I know in the USA there isnt there not that popular but you do have heaps of Canadians that read the magazine (which is great btw)
