I won't make a trip to the store just for a "hot" pepper or chili. I have often used several shakes of hot pepper flakes to add some heat to the recipe. It even works in salsa when in a pinch.

Penzeys makes this wonderful lemon-in-a-jar. It's powdered lemon rind, and a few shakes adds a wonderful lemony taste when I don't have a fresh lemon. I just have to make certain that I keep it in a cool place and replace it every year or so since it's potency decreases with time (I buy the small-size plastic jar). I've even added this to lemonade made with bottled lemon juice and the taste is so much better.
